Vegetarian San Choy Bau
- 2 carrots, finely chopped
- 1/2 bunch green onions, finely chopped
- 1 garlic clove, minced
- 1 tbsp grated ginger
- 1 1/2 tbsp fish sauce
- 1/4 cup ketchup manis
- 2 tbsp lime juice
- 1/2 bunch coriander, chopped
- 1 bag Seaweed Green Pea Harvest Snaps
- 1 long red chilli, sliced
- 1/3 cup cashew nuts, chopped
- 1 lime, segmented
- Iceberg or cos lettuce leaves to serve
- In a large bowl, mix together mushrooms, carrots, green onions, garlic, ginger, fish sauce, ketchup manis, lime juice and coriander.
- Serve mix in lettuce cups and sprinkle with chilli, cashew nuts and lime segments.
