Vegetarian San Choy Bau

  • 2 carrots, finely chopped
  • 1/2 bunch green onions, finely chopped
  • 1 garlic clove, minced
  • 1 tbsp grated ginger
  • 1 1/2 tbsp fish sauce
  • 1/4 cup ketchup manis
  • 2 tbsp lime juice
  • 1/2 bunch coriander, chopped
  • 1 bag Seaweed Green Pea Harvest Snaps
  • 1 long red chilli, sliced
  • 1/3 cup cashew nuts, chopped
  • 1 lime, segmented
  • Iceberg or cos lettuce leaves to serve
  1. In a large bowl, mix together mushrooms, carrots, green onions, garlic, ginger, fish sauce, ketchup manis, lime juice and coriander.
  2. Serve mix in lettuce cups and sprinkle with chilli, cashew nuts and lime segments.
