Dinner
Mediterranean Pasta by @naturalspoonfuls
- 200g Fettucine
- 1 tsp Extra Virgin Olive Oil
- 1⁄2 Red Onion, diced
- 1 Garlic Clove, roughly chopped
- 2 Button Mushrooms, sliced
- 1 tsp Oregano
- 1 tsp Basil
- 1 x 400g can Crushed Tomatoes
- 8 Cherry Tomatoes
- 8 Kalamata Olives
- 60g Feta, crumbled
- Harvest Snaps – Tasty Toppers (Garlic & Rosemary)
- Cook pasta as per packet instructions.
- Meanwhile, heat olive oil in a small saucepan.
- Add red onion and garlic to pan and cook for 1-2 minutes or until fragrant.
- Add mushrooms, basil and oregano to pan and cook for one minute until mushrooms have slightly softened.
- Add crushed tomatoes, cherry tomatoes and olives to saucepan, allow to heat through and for cherry tomatoes to soften, approximately 7 minutes.
- Return drained pasta to pot and stir though sauce. Stir through feta.
- Plate and top with Harvest Snaps Garlic & Rosemary Tasty Toppers!
