Mediterranean Pasta by @naturalspoonfuls

  • 200g Fettucine
  • 1 tsp Extra Virgin Olive Oil
  • 1⁄2 Red Onion, diced
  • 1 Garlic Clove, roughly chopped
  • 2 Button Mushrooms, sliced
  • 1 tsp Oregano
  • 1 tsp Basil
  • 1 x 400g can Crushed Tomatoes
  • 8 Cherry Tomatoes
  • 8 Kalamata Olives
  • 60g Feta, crumbled
  • Harvest Snaps – Tasty Toppers (Garlic & Rosemary)
  1. Cook pasta as per packet instructions.
  2. Meanwhile, heat olive oil in a small saucepan.
  3. Add red onion and garlic to pan and cook for 1-2 minutes or until fragrant.
  4. Add mushrooms, basil and oregano to pan and cook for one minute until mushrooms have slightly softened.
  5. Add crushed tomatoes, cherry tomatoes and olives to saucepan, allow to heat through and for cherry tomatoes to soften, approximately 7 minutes.
  6. Return drained pasta to pot and stir though sauce. Stir through feta.
  7. Plate and top with Harvest Snaps Garlic & Rosemary Tasty Toppers!
